Coconut Pineapple Cake
I was blessed enough to grow up with two grandmother’s who were absolute wiz’s in the kitchen! Now that I’m older and people have found out that I too have taken on the “kitchen gene” so to speak, someone will always say, “Your grandmother made awesome cakes!” What do I say? “I know!” :-) Anyway, my paternal grandmother, Henrietta Mosley, was also known around town as “The Cake Lady” and one of my favorite cakes from her was her coconut cake with an absolutely luscious pineapple filling. Sometime in 2010 I tried to figure out how she went about making this cake and I came up with an idea! “Greer, why don’t you just use her pound cake recipe as the base and find a simple pineapple filling recipe to add between the layers??”, I asked myself. So what did I do? Exactly that! Take a look at the photos and find out how it all looks once it’s together! And yes, it tastes exactly like my grandma’s. :-)
Vegan Carrot Cake! Yum!!!
Most people think that vegan anything is disgusting but I must say this: THAT JUST ISN’T TRUE!!! Did you know that some of our favorite snacks are vegan!? There are Oreo cookies (depending on how strict your vegan diet is), Frito’s corn chips and even Dorito’s Spicy Sweet Chili flavored chips! Anyway I say all that to say that this vegan carrot cake is absolutely delicious! Between using almond milk and unsweetened applesauce to keep the cake nice and moist there’s no reason that you shouldn’t enjoy a healthy slice of this cake! The Christmas Holiday!!!!
This Christmas season I had the opportunity to churn out a few cakes! Let’s see: 2 red velvet cakes, 3 dozen red velvet cupcakes and a cheesecake… And another dozen of red velvet cupcakes to complete today. Yum! I do hope that everyone had a wonderful Christmas and I pray that your New Year will be 10x’s better than you can ever imagine! God bless you guys!

In celebration of my coworkers who have birthdays in December, as well as the holiday season, I decided to make cupcakes! Chocolate cupcakes with caramel buttercream frosting. Generally, I am NOT a buttercream kind of girl… unless it comes on one of those awesome sheet cakes from Sam’s or BJ’s (that whipped buttercream is delicious!); but this was one of the easiest buttercream recipes that I have come across since I began baking. I took two dozen cupcakes to work and came back with two empty Tubberware containers! I guess that means everyone liked them. :-)
Crisp Salted Oatmeal White Chocolate Cookies!
I found this delicious recipe over at Smitten Kitchen one day last week and just new that I had to try it! While directions say to line the baking sheet with parchment paper, I opted to bake them 3 ways. The first batch was baked on a lightly greased cookie sheet; this cookie was a little dark on the bottom, but not burned, with a slight crust around the bottom edges. The second batch was baked as the directions suggested. I guess they turned out how they were supposed to! (lol) The third, and final batch, was baked directly on the cookie sheet; no “Pam” or parchment paper! They came out just as well as the second batch. Based on the pictures from Smitten Kitchen, i see that I didn’t make the cookie thick enough, but I am absolutely pleased with all 3 of my results. Personally, I love a crunch cookie and these salted oatmeal white chocolate cookies lived up to the CRUNCH!
