Coconut Pineapple Cake
I was blessed enough to grow up with two grandmother’s who were absolute wiz’s in the kitchen! Now that I’m older and people have found out that I too have taken on the “kitchen gene” so to speak, someone will always say, “Your grandmother made awesome cakes!” What do I say? “I know!” :-) Anyway, my paternal grandmother, Henrietta Mosley, was also known around town as “The Cake Lady” and one of my favorite cakes from her was her coconut cake with an absolutely luscious pineapple filling. Sometime in 2010 I tried to figure out how she went about making this cake and I came up with an idea! “Greer, why don’t you just use her pound cake recipe as the base and find a simple pineapple filling recipe to add between the layers??”, I asked myself. So what did I do? Exactly that! Take a look at the photos and find out how it all looks once it’s together! And yes, it tastes exactly like my grandma’s. :-)
